Santa Biggs’ Buffalo Chip Cookies
Ingredients
-
1 cup butter, softened
-
1 cup shortening
-
2 cups brown sugar, firmly packed
-
2 cups granulated sugar
-
4 large eggs
-
2 teaspoons vanilla extract
-
4 cups all-purpose flour
-
2 teaspoons baking powder
-
2 teaspoons baking soda
-
1 teaspoon salt
-
2 cups old-fashioned oats
-
2 cups semi-sweet chocolate chips
-
1 cup raisins
-
1 cup flaked coconut
-
1 cup chopped pecans
Directions
-
Preheat the oven to 350°F. Line baking sheets with parchment paper or leave them ungreased.
-
Cream the butter and shortening together in a large mixing bowl until smooth and creamy. Gradually add the brown sugar and granulated sugar, beating until light and well combined.
-
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
-
Combine the dry ingredients in a separate bowl. Whisk together the flour, baking powder, baking soda, and salt.
-
Make the dough by gradually adding the dry ingredients to the creamed mixture and mixing until combined.
-
Add the good stuff. Stir in the oats, cereal, chocolate chips, raisins, coconut, and pecans until evenly distributed throughout the dough.
-
Make them Santa-sized. Scoop approximately 1/4 cup of dough per cookie onto the prepared baking sheets, leaving plenty of room between each cookie.
-
Bake for 12–15 minutes, or until the edges are lightly golden and the centers are set.
-
Cool for about 5 minutes on the baking sheet before transferring the cookies to a wire rack.
Santa’s Serving Suggestion
Serve one warm with a cold glass of iced milk.
And remember, these aren’t ordinary little cookies. They’re called Buffalo Chip Cookies for a reason. Make them big enough for Santa
