Grandma Bessie’s
Thumbprint Cookies

Ingredients

Ingredients

  • ¼ cup brown sugar, firmly packed

  • ¼ cup shortening

  • ¼ cup butter, softened

  • ½ teaspoon vanilla extract

  • 1 large egg, separated

  • 1 cup all-purpose flour

  • ¼ teaspoon salt

  • ¾ cup finely chopped nuts

  • Jelly or preserves, such as raspberry, strawberry, apricot, or blackberry

Directions

  1. Preheat the oven to 350°F. Line baking sheets with parchment paper or leave them ungreased.

  2. Make the dough. In a large mixing bowl, cream together the brown sugar, shortening, butter, and vanilla until smooth.

  3. Add the egg yolk and mix until well combined.

  4. Add the dry ingredients. Stir in the flour and salt until a soft dough forms.

  5. Prepare the coating. Lightly beat the egg white in a small bowl. Place the chopped nuts in a separate shallow bowl.

  6. Shape the cookies into approximately 1-inch balls.

  7. Coat the cookies. Dip each ball into the beaten egg white, then roll it in the chopped nuts until evenly coated.

  8. Make the thumbprint. Place the cookies on the prepared baking sheet and press your thumb gently into the center of each cookie to make a deep indentation.

  9. Bake for about 10 minutes, or until the edges are lightly set and the cookies are beginning to turn golden.

  10. Cool completely on a wire rack.

  11. Fill the centers with your favorite jelly or preserves once the cookies have cooled.

Santa’s Serving Suggestion

Fill a Christmas cookie tray with a mix of raspberry, strawberry, and apricot thumbprints for a little extra North Pole color.

These little cookies may be small, but Santa knows better than to underestimate anything filled with butter, nuts, and jelly.
